We wanted to re-create the flavours of Pho we tasted back in Hanoi last year but we wanted it on a salad, so you didn’t slosh about on your way back to your office.
We tried and tested so many different versions of this, but think this one is best!
This is our super delicious Pho Aioli recipe, which you can find on our Vietnamese Bowl. Enjoy!
250ml sunflower oil
250ml cold soy milk
juice of 1 lime
1 teaspoon vinegar of choice, we use kombucha vinegar
1/2 teaspoon star anise, powdered
1/2 teaspoon chinese 5 spice
1/2 teaspoon ground ginger
2 garlic cloves, peeled
1/2 teaspoon salt
splash of water
Add everything but the oil in a blender. We use a vitamix but it can be any blender used for smoothies etc.
Blend until smooth
Incorporate the oil slowly until it’s all combined with the soy milk mixture
It’s ready to go! Add to noodles, fresh banh mi or with dumplings!
