Chickpea ‘Tuna’ Salad

Ah, the humble chickpea. A vegans best friend.

A cheap ‘n’ easy filling for a sarnie or a jacket potato.

Make this and you’ll forever have it in your collections of go-to cheap and easy vegan recipes.

2 tins of chickpeas, drained

1 small red onion, chopped finely

1 tin of sweetcorn, drained

1 pinch of pepper

1 pinch of salt

3 tablespoons of vegan mayonnaise, either shop-bought, or our recipe for vegan mayo!

  1. Add the chickpeas, seasoning and mayonnaise into a bowl

  2. With your hands, break the chickpeas up roughly, keeping some texture

  3. Add the rest of the ingredients and mix

  4. Serve in a sandwich with rocket or in a jacket potato with a side salad. Delish!
